🌌 NORTHERN LIGHTS OUTLOOK

The University of Alaska Fairbanks Geophysical Institute lists Low Activity for Friday, November 6. The hourly forecast shows higher activity earlier in the day, with the forecast Kp declining through the evening.

What About Tonight’s Viewing?

Here’s where the forecast needs a closer look. The daily UAF outlook is Low Activity, and the evening hourly forecast drops to Kp 3 at both 6 p.m. and 9 p.m. That does not rule out seeing the aurora, but it is not the strongest activity forecast of the day.

Cloud cover is another obstacle. Wasilla, Anchorage and Homer are forecast to be mostly cloudy tonight. Seward is also forecast mostly cloudy, with a chance of showers after 3 a.m.

💅 Memaw’s viewing outlook: Tonight is not shaping up as the best Southcentral viewing opportunity. If you get a break in the clouds, it may be worth stepping outside for a look, but don’t count on clear skies.

Looking ahead to Saturday, November 7: UAF forecasts Moderate Activity, with Kp 3 around midnight. The institute notes that moderate aurora may be visible overhead north to Talkeetna if skies are clear, with a lower horizon farther south. Cloud cover will still have the final say.

The moon is a waning crescent. 🌙

🍁 THE WEEKEND WEATHER LOOK

💅 PARTING WORDS FROM MEMAW

It’s National Nachos Day, honey! And Memaw believes a day devoted to tortilla chips, melted cheese and all the fixin’s deserves proper attention.

So get home safely, keep an eye on those changing conditions, and then gather around something warm and delicious. Here’s a recipe with enough layers to make everybody at the table happy.

MEMAW’S “OH MY STARS!” NACHOS

Loaded to the heavens with all the fixin’s.

aHoly guacamole, honey! These nachos are loaded higher than the Northern Lights! One bite and you’ll be hollerin’, OH MY STARS! 💅🧀🌶️✨

Serves: 6 as a hearty meal or 10–12 as an appetizer
Prep: About 25 minutes
Cook: About 25 minutes, with overlap

Ingredients

Smoky Beef and Bacon

  • 6 slices thick-cut bacon, chopped
  • 1 lb lean ground beef
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp kosher salt, plus more to taste
  • ¼ tsp black pepper
  • ⅓ cup water
  • 2 tsp Worcestershire sauce

Skillet Corn and Black Beans

  • 1 cup thawed and dried frozen corn
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp lime juice
  • Pinch of salt

Pimento-Cheddar Queso

  • ¾ cup evaporated milk, plus more as needed
  • 8 oz deli American cheese, chopped
  • 1 cup freshly shredded sharp cheddar (about 4 oz)
  • 1 jar (4 oz) diced pimentos, drained
  • 1 tbsp pickled jalapeño brine
  • ¼ tsp garlic powder

Jalapeño-Lime Cream

  • ¾ cup sour cream
  • 1 tbsp lime juice
  • 1 tbsp pickled jalapeño brine
  • 1–2 tbsp water

Nachos and Toppings

  • 1 bag (14–16 oz) sturdy tortilla chips
  • 2 cups freshly shredded Monterey Jack (about 8 oz)
  • 1 cup pico de gallo, drained
  • 1 cup guacamole
  • ⅓ cup sliced pickled jalapeños
  • ⅓ cup sliced black olives
  • ⅓ cup sliced green onions
  • ¼ cup chopped cilantro, optional
  • ½ cup crumbled cotija
  • Hot sauce and lime wedges, for serving

Directions

  1. Get everything ready. Preheat the oven to 400°F. Line two rimmed baking sheets with parchment paper. Prepare the toppings and drain excess liquid from the pico de gallo. Stir together the sour cream, lime juice and jalapeño brine. Thin with water until drizzle-friendly, then refrigerate.
  2. Cook the bacon. In a skillet, cook the chopped bacon until crisp. Transfer to a paper-towel-lined plate. Reserve about 1 tablespoon of bacon fat and discard the rest.
  3. Make the smoky beef. Cook the onion in the reserved bacon fat for 3–4 minutes. Add the ground beef, crumble and cook through, then drain excess fat. Stir in the garlic, tomato paste, chili powder, cumin, smoked paprika, oregano, salt and pepper. Cook for 1 minute. Add the water and Worcestershire sauce. Simmer for 3–5 minutes, until moist but not soupy. Keep warm.
  4. Prepare the corn and beans. Brown the corn in a skillet for 3–4 minutes. Add the black beans and heat through. Stir in lime juice and a pinch of salt.
  5. Make the queso. Warm the evaporated milk until steaming but not boiling. Add the American cheese by handfuls, stirring until melted. Gradually add the cheddar. Stir in the pimentos, jalapeño brine and garlic powder. Keep over low heat. If the queso thickens too much, add evaporated milk 1 tablespoon at a time.
  6. Build the nachos. Spread the tortilla chips across the two baking sheets in shallow, overlapping layers. Sprinkle with half the Monterey Jack, then add the beef and corn-and-bean mixture. Top with the remaining Monterey Jack.
  7. Bake and finish. Bake for 6–9 minutes, until the cheese melts and the edges of the chips begin to toast. Rotate the pans as needed. Drizzle with queso and jalapeño-lime cream. Add the bacon, pico de gallo, jalapeños, olives, green onions, cilantro, cotija and guacamole. Serve immediately with the remaining sauces, hot sauce and lime wedges.

Memaw’s Little Touches

  • Want a gentler batch? Use milk instead of jalapeño brine in the cream and serve the peppers and hot sauce on the side.
  • Add cold toppings just before serving so they stay fresh.
  • Don’t count the layers, honey. Count your blessings.
