🎃 National Pumpkin Day: A Little Pumpkin History

October 26 is National Pumpkin Day, the perfect excuse to embrace pumpkin bars, cookies, coffee, cheesecake, pasta, oatmeal and, naturally, pumpkin pie.

Pumpkins are native to North America. Archaeologists have found domesticated pumpkin seeds in Mexico dating back roughly 7,500–5,500 B.C. Indigenous peoples cultivated pumpkins and other squash long before European explorers arrived, using the flesh, seeds and blossoms for food.

The jack-o’-lantern tradition came to America with Irish immigrants. They originally carved turnips and potatoes, then discovered that the native pumpkin was larger and easier to carve.

Want to celebrate? Roast pumpkin seeds, visit a pumpkin patch, carve a jack-o’-lantern or bake something delicious. Share your celebration with #NationalPumpkinDay.

🥧 Memaw’s “Save Me a Slice” Pumpkin Pie

Alaska Headline Living ©️

Memaw’s putting pumpkin on the menu, and you’d best leave room for dessert. This pie keeps things simple: a ready-made crust, a creamy pumpkin filling and enough spice to make the kitchen smell like fall. The secret ingredient? Whoever volunteers to wash the dishes.

Ingredients

  • 1 unbaked 9-inch pie crust, homemade or store-bought. Memaw’s not checking.
  • 1 can (15 ounces) plain pumpkin purée
  • 1 can (14 ounces) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • Whipped cream, for serving

Let’s Make It

  1. Heat the oven to 425°F. Set the crust in a 9-inch pie plate if it isn’t already there.
  2. Mix the filling. In a large bowl, whisk the pumpkin, condensed milk, eggs, cinnamon, ginger, nutmeg and salt until smooth. No mixer required. Save yourself the extra dishes.
  3. Fill the crust. Place the pie plate on a rimmed baking sheet, then pour in the filling.
  4. Bake. Bake for 15 minutes. Reduce the heat to 350°F and bake another 35–40 minutes, until the edges are set and the center still has a slight jiggle. If the crust edges get too brown, loosely cover them with foil.
  5. Cool completely. Yes, waiting is the hardest part.
  6. Serve. Add whipped cream and enjoy. Cut yourself a piece before announcing it’s ready.

Memaw’s rule: Store-bought crust is fine. Forgetting to save her a slice is not.
