Good morning, road warriors! 💅 Alaska woke up today playing a little game of “Guess What I’m Doing Next?”
Wasilla is wearing a blanket of fog. Anchorage gets some sunshine after the morning murk. Seward is already flexing some serious north wind. Then, just when you think you’ve got the day figured out, rain comes knocking tonight.
And Mother Nature has apparently booked herself a late-night appointment with the aurora. The Geophysical Institute is calling for moderate aurora activity, with Kp climbing as high as 6 this afternoon, although clouds and late-summer Alaska daylight will have the final say.
Oh, and it’s National Pots de Crème Day, which means Memaw has decided that surviving Alaska weather deserves a proper reward. 🍫💅 There’s a rich, chocolatey little pot of happiness waiting for you in Memaw’s Parting Words, and yes, I included the recipe. - Sky: Patchy morning fog gives way to mostly sunny skies, followed by increasing clouds and rain tonight. The aurora forecast is moderate, but clouds and darkness are the wild cards.

💅 Memaw’s Parting Words
Well, butter my ramekin and call me fancy. Today we’ve got fog, sunshine, rain, wind, clouds and a possible northern-lights encore all packed into one Southcentral Alaska day.
And because today is National Pots de Crème Day, Memaw says every road warrior deserves a little chocolate therapy after surviving the commute. The celebration is all about that silky French custard, traditionally served in little pots or ramekins.
So here’s your evening assignment: get home safely, make dessert, turn off the porch light and look north. If the clouds cooperate, Alaska may give you one more reason to stay up past your bedtime. ✨
🍫 Memaw’s Chocolate Pots de Crème
Makes: 6 small servings
Active time: 20 minutes
Chill time: At least 4 hours, preferably overnight
Ingredients
- 6 ounces semisweet or bittersweet chocolate, finely chopped
- 1 cup heavy cream
- 1 cup whole milk
- 4 large egg yolks
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine salt
- 1/2 teaspoon instant espresso powder, optional
- Whipped cream, chocolate shavings, raspberries or flaky salt, for serving
Directions
- Place the chopped chocolate in a heatproof bowl. Add the vanilla, salt and espresso powder, if using.
- Warm the cream and milk in a medium saucepan over medium heat until small bubbles form around the edge. Do not boil.
- In a separate bowl, whisk the egg yolks and sugar until smooth and slightly lighter in color.
- Slowly drizzle about half of the hot cream mixture into the egg yolks, whisking constantly. This gradually warms the eggs and helps prevent scrambling.
- Pour the egg mixture back into the saucepan. Cook over low heat, stirring constantly with a heatproof spatula or wooden spoon, until the custard thickens enough to coat the back of the spoon, about 2 to 4 minutes.
- Pour the hot custard through a fine-mesh strainer over the bowl of chocolate. Let it stand for 2 minutes, then whisk until the chocolate is completely melted and the mixture is smooth and glossy.
- Divide the custard among six small ramekins, teacups, jelly jars or demitasse cups. Cover and refrigerate for at least 4 hours, preferably overnight.
- Set the pots de crème out for 10 to 15 minutes before serving. Finish with whipped cream and, if you like, chocolate shavings, berries or a tiny sprinkle of flaky salt.
Memaw’s Notes
- Use chocolate that tastes good straight from the wrapper. It makes all the difference.
- If the custard seems lumpy, strain it before it reaches the chocolate.
- Keep covered pots de crème refrigerated for up to 4 days.
- For a special-occasion version, stir 1 tablespoon bourbon, brandy or orange liqueur into the finished custard before dividing it among the cups.
- The finished dessert should be soft, creamy and spoonable, more like a luxurious pudding than a firm mousse.
And remember, sweetheart: stressed spells desserts backward. Coincidence? Memaw thinks not. 💅🍫✨
