  • 2 lbs beef chuck steak
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp oil (vegetable or olive oil)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 cup beef broth
  • 1/2 cup water, plus 2 tbsp for slurry
  • 2 tbsp cornstarch
  • 2 cups frozen broccoli florets
  • Fresh thyme

  1. Season and Sear the Steak
    Pat the chuck steak dry and season with salt and pepper. Heat oil in a large nonstick or heavy skillet over medium-high heat.
    Sear steak 3–4 minutes per side until deeply browned. Remove and set aside.
  2. Sauté the Vegetables
    Add sliced onion and bell pepper to the same skillet. Sauté for 3–5 minutes, scraping up browned bits, until tender and golden.
  3. Simmer Until Tender
    Return beef to the skillet. Add beef broth and add fresh thyme; bring to a gentle simmer.
    Cover tightly, reduce heat to low, and cook for about 45 minutes, or until the beef is fork-tender.
  4. Add the Broccoli
    Stir in frozen broccoli during the last 5–10 minutes of simmering. Cover again and cook until broccoli is tender and bright green.💡 Pro Tip: For crisp-tender broccoli, steam or microwave it separately for 3 minutes, drain, and stir it in just before serving.
  5. Make the Gravy
    Transfer beef and vegetables to a platter; keep warm.
    In a small bowl, mix cornstarch with 2 tbsp cold water to make a slurry. Whisk it into the skillet juices over medium heat until thickened, about 2 minutes.
  6. Serve
    Slice or pull the beef into portions. Spoon the onion-pepper-broccoli mix over top and drizzle with rich pan gravy.
