🧂 Ingredients
- 2 lbs beef chuck steak
- Salt and freshly ground black pepper, to taste
- 2 tbsp oil (vegetable or olive oil)
- 1 large onion, thinly sliced
- 1 large green bell pepper, thinly sliced
- 1 cup beef broth
- 1/2 cup water, plus 2 tbsp for slurry
- 2 tbsp cornstarch
- 2 cups frozen broccoli florets
- Fresh thyme

- Season and Sear the Steak
Pat the chuck steak dry and season with salt and pepper. Heat oil in a large nonstick or heavy skillet over medium-high heat.
Sear steak 3–4 minutes per side until deeply browned. Remove and set aside. - Sauté the Vegetables
Add sliced onion and bell pepper to the same skillet. Sauté for 3–5 minutes, scraping up browned bits, until tender and golden. - Simmer Until Tender
Return beef to the skillet. Add beef broth and add fresh thyme; bring to a gentle simmer.
Cover tightly, reduce heat to low, and cook for about 45 minutes, or until the beef is fork-tender. - Add the Broccoli
Stir in frozen broccoli during the last 5–10 minutes of simmering. Cover again and cook until broccoli is tender and bright green.💡 Pro Tip: For crisp-tender broccoli, steam or microwave it separately for 3 minutes, drain, and stir it in just before serving. - Make the Gravy
Transfer beef and vegetables to a platter; keep warm.
In a small bowl, mix cornstarch with 2 tbsp cold water to make a slurry. Whisk it into the skillet juices over medium heat until thickened, about 2 minutes. - Serve
Slice or pull the beef into portions. Spoon the onion-pepper-broccoli mix over top and drizzle with rich pan gravy.
